TOREADOR PANCAKES makes 6 pancakes
Ingredients:
4 oz self raising flour
Seasoning
1 egg
Milk
Tin of corned beef
Onion, chopped finely
Tin of tomato soup
Plain crisps
Method:
Whisk the flour, egg, milk + seasoning to a thin smooth batter
Using very little oil in the frying pan, make six pancakes from above mixture
In a bowl, mix the corned beef and onion and mash well
Place some of the corned beef mixture into each pancake and roll up
Lay filled pancakes in a dish
Pour the tomato soup over
Sprinkle crushed crisps over
Bake at gas mark 5, 190°c or 375°f for approx 20 minutes
