MALT LOAF

* Tip – have a jug of warm water handy to put utensils in after use

Ingredients:

• 1lb dried fruit

• 6 oz Muscovado light sugar

• 1 tablespoon malt extract

• ½ pint cold tea (black)

• 1 beaten egg

• 10 oz self raising flour 

Method:

• Mix sugar, malt extract and tea together in a bowl

• Add the dried fruit and soak for at least 3 hours

• After 3 hours, beat in the egg

• Add the flour

• Spoon mixture into a lined 2lb loaf tin and level the surface

• Bake at gas mark 4, 180°c or 360°f   for approx. 1¼– 1½ hrs 

• Cover the top with foil after 1 hour

• Leave in tin until cool

• Best served buttered!
