MALT LOAF
* Tip – have a jug of warm water handy to put utensils in after use
Ingredients:
1lb dried fruit
6 oz Muscovado light sugar
1 tablespoon malt extract
½ pint cold tea (black)
1 beaten egg
10 oz self raising flour
Method:
Mix sugar, malt extract and tea together in a bowl
Add the dried fruit and soak for at least 3 hours
After 3 hours, beat in the egg
Add the flour
Spoon mixture into a lined 2lb loaf tin and level the surface
Bake at gas mark 4, 180°c or 360°f for approx. 1¼– 1½ hrs
Cover the top with foil after 1 hour
Leave in tin until cool
Best served buttered!
