LEMON AND ORANGE CAKE
Ingredients:
4 oz margarine
6 oz sugar
6 oz self raising flour
4 tablespoons milk
2 eggs
Grated rind of 1 lemon + 1 orange
For Syrup:
3 tablespoons icing sugar
3 tablespoons lemon + orange juice
Method:
Cream together margarine + sugar
Add eggs, flour, rind and milk
Mix well
Turn into loaf tin
Make sure top is level
Bake at gas mark 4, 180°c or 360°f for approx. 40 – 45 mins
Mix sifted icing sugar with orange/lemon juice
Pour over the cake as soon as it comes out of the oven
Leave in tin until cold
