APPLE CAKE
Ingredients:
4 oz margarine
4 oz sugar
1 large egg
8 oz self raising flour
Pinch salt
Half a pound of cooking apple
4 tablespoons milk
Method:
Cream together margarine and sugar
Beat egg and add to margarine / sugar mix, beating well
Sieve flour and salt and add to mixture
Peel and core apple and chop roughly
Stir into mixture
Pour mixture into a Swiss roll tin, approx 11” x 7”
Bake at gas mark 4, 180°C or 360°F for approx. 25 – 30 minutes
Sprinkle with sugar once cooked
